delicious cherry crepes
Preparation Time: 5 minutes plus 30 minutes resting
Cooking Time: 24 minutes
Serves: 6 (2 per person)
1 cup plain flour (150g), sifted
Dash of vanilla essence (optional)
300g fresh cherries
CherriShed cherry sauce
Icing sugar (optional)
method:1. Place eggs, flour milk & vanilla essence, along with a pinch of salt in a food processor or blender. If mixture is too thick, add 1/2 cup of water.
2. Blend until smooth, then strain into jug to eliminate clumps. Cover, then rest for 30 minutes.
3. Heat non-stick frypan over medium heat. When hot pour just enough mixture to cover base of pan. Tilt pan so batter covers pan in thin film, then pour any excess back into jug. Cook for about 1 minute until golden, then flip with spatula. Cook other side for under a minute until golden.
4. Transfer to a plate covered with foil to keep warm. Repeat, stacking crepes on top of each other.
5. When ready to serve, garnish with fresh cherries, ice-cream, sauce and icing suger to taste.
